What this page cannot tell you

Recipes written for a fan (convection) oven or a conventional one are not interchangeable without adjustment; follow the recipe or the oven maker's guidance for that. Oven thermostats can run hot or cold, and an oven thermometer shows the real temperature.

Method: °C = (°F − 32) × 5 ÷ 9. Gas mark 1 = 275 °F, rising 25 °F per mark; below mark 1 the marks halve (½ = 250 °F, ¼ = 225 °F) (Gas mark). Retrieved 2026-10-24.

How the conversion works

°C = (°F − 32) × 5 ÷ 9 and °F = °C × 9 ÷ 5 + 32. Gas mark 1 is 275 °F; each mark above it adds 25 °F, so gas mark 4 is 350 °F and 9 is 475 °F. Below mark 1 the marks halve: ½ is 250 °F and ¼ is 225 °F.

The nearest gas mark is shown with how far the temperature is from it.

Limits: recipes for fan (convection) ovens and conventional ovens are not interchangeable without adjustment; follow the recipe or the oven maker's guidance. Oven thermostats can run hot or cold.
